Not every side quest has a boss waiting for players in the final room. Also, the side boss counterparts of main bosses (Xaldin: Viper, Rangkus: Bringkus, etc) share the same drop tables. However, if you want to farm the Fallen Lord set that buffs Spear skills, for example, then you'll want to farm Xaldin or Mutated Xilence since they drop higher-level Fallen Lord pieces compared to Viper.
