I would play a Sonic 06 remake.

How I see it, Sonic Team can pull it off because they now have things in order. A console that can handle the game's demands, time and an established team. If they can pull it off the game would be easily considered the turnabout of the franchise. Taking a game that was seen as a mark of shame into one of pride. A really nice comeback story.
