Final Fantasy VII materia grind isn't an issue at all. There is quite a bit of double and triple growth equipment in the game, even very on like Costa de Sol. This makes grinding materia very fast. Further, if you want to max all materia for achievements it takes about 30 minutes... Just do it in the final dungeon, Northern Crater, on an enemy called Magic Pot which gives 1,000 AP per Magic Pot (up to 6,000 per battle).
Final Fantasy VIII draw is initially tedious but after you have some stats you can draw 9x per use, or better yet just use card / item mod and convert spells instantly to 100x, even for rare spells.
Final Fantasy IX you simply level the equipment as you progress, especially since you will trade it in to synthesize much of the time thus losing it for better equipment. Doing this as you progress means you aren't forced to use weaker equipment.
