The Ultima games were amazing. They had day/night cycles, and NPCs with their own lives/job cycles that changed accordingly. You could follow an NPC around and see them living out their day to day life, seeing them goto sleep at a certain time, waking up for work, taking a break at a certain time for meals, and closing up their stores at night to spend time with their families. I remember even seeing a married NPC sneak out of their house at night once, followed them and caught them cheating on their spouse with another NPC. Way ahead of their time.
