Its never actually confirmed that eating more than one Devil Fruit kills the user. It's a superstition explained by Devil Fruit house Devil and two Devil's will fight each other which was already disapproved by Vegapunk.
Its just that noone ever tried to eat two because of fear. And it's also incredibly hard to find one Devil Fruit let alone have two
