It's not a mainline entry, but I feel Final Fantasy Tactics and Ramza deserve to be on this list. With the job system he can learn a truly ridiculous number of abilities with only a couple of the unique classes locked off. In story he was able to go up against the forces of hell and beat demons and dark gods and just regularly pulled off the craziest victories despite regularly being ambushed and walking into traps.
