From the first hours of Oblivion Remastered, merchants will become your best friends. They will gladly buy everything you offer, even if it is hundreds of relatively cheap potions. However, buying from them has some limitations. To be precise, their stock is often quite small. Once you buy all they have to offer of one item, you will not be able to buy it again, even if you visit the shop the next day.
For some reason, merchants in the lands of Cyrodiil restock their shops extremely rarely in Oblivion Remastered. Usually, you need to do other things, like completing quests, to find the necessary items again in the shop's stock. Fortunately, there is a way to significantly speed up this process.

How to Restock Shops
First, you need to buy everything you need from the merchant. It does not matter whether these are ingredients, potions, or other items. Then, use fast travel to move to a completely different area. For example, if you were shopping in one of the shops in the Imperial City, traveling to the Roxey Inn or any place further than that in Oblivion Remastered will do. It is worth noting that to fast travel around the world, you need to exit the shop building.
Then, you will have to wait 3 days. You do not have to sleep for this, so you can just wait 24 hours. On PC, you need to press the T key by default to wait. Then repeat this two more times so that a total of three days have passed. During this wait, you should not visit the shops or the area where they are located. As soon as three days have passed, fast travel to the Shop again, and you will find a full range of goods that the shopkeeper will happily sell you.
