As it turns out, this particular glitch is one that was seen in the original release of Oblivion, which was sometimes triggered by switching between first- and third-person perspectives. The glitch hasn't changed between Oblivion and Oblivion Remastered, and thankfully, there's an easy fix.

As numerous players shared, all that one needs to do to get back to their usual height is to switch to Oblivion Remastered's third-person perspective, manually save the game, completely quit out, and then re-load the save.
