There's only so much a Novice Alchemist can make in The Elder Scrolls IV: Oblivion Remastered, but there are a few useful potions that players can make as beginners that are actually useful.
Most of the ingredients that characters pick up at the beginning of the game consist of plants, mushrooms, and food items, which can be found outdoors, looted from enemies, or purchased from innkeepers. As a Novice Alchemist, players will only be able to see a single effect of each ingredient in their Inventory. 7 Restore Health

Players can use a few combinations to make a basic Restore Health potion, but these are the two ingredients they'll probably come across first. Other items that the player can find that also restore health are Daedra Hearts and Fly Amanitas, but these have Restore Health as a secondary effect, and a Novice won't be able to use them yet.
Don't assume the Mortar and Pestle are only used for herbs, plants, and other materials. Sometimes it's possible to use basic supplies like bread and apples in an alchemical mix. The result of this combination is often some variation on a Novice-level Restore Health potion.
6 Restore Agility

5 Restore Magicka

The simple, colorful wildflowers that line the hills and roadsides of central Tamriel are the source of Flax Seeds, and it's easy to walk past them without even knowing what they are. On the other hand, Blue Entoloma is a distinctive mushroom with a wavy blue cap and is fairly easy to find, especially on the open plains south of the Imperial City.
A Mage build might be difficult at the beginning when the spell list has few entries and the Magicka bar runs out far too quickly, which is why making a few of these potions is essential for an adventurer who uses magic as their main weapon. Even physical DPS builds should keep a few of these potions on hand just in case.
4 Restore Strength

The ingredients in this potion seem to like shade and low ground, and are easily found by new characters exploring the hills and woods. Monkshood is a long and tall flower with numerous blossoms. Peony is common throughout Tamriel, and Dryad Saddle Polypore Cap is a shelf mushroom that grows from rotting wood and old trees.
3 Resist Poison
A Defensive Potion

Resist Poison is one of the few defensive potions that a Novice can make, and it's a handy one because many of the lower-level enemies use poison. Goblins or bandits can wield arrows tinged with poison, but outside of combat, there are certain foods the player can eat that also poison them.
Poison Resist will slow the effect and make it less deadly. It won't be as effective as
Cure Poison, but the more powerful concoction isn't available to Novice Alchemists as a crafted item. However, low-level players can still loot Cure Poison potions from a body, take them from a chest, or purchase them from a vendor. Until then, the player can brew a few mixes of Resist Poison.
2 Restore Endurance

Alkanet Flower is easy to miss because it's tall and thin, but it grows in various places and has bright blue flowers that help it stand out. Clouded Funnel Cap is a bit more elusive, but it likes dark places next to rocks and has a wavy, grayish-blue cap.
