If Yuji never ate Sukuna's finger, Sukuna's cursed energy would be in dormant mode within the talisman-sealed artifact. That would make events at Sugisawa High much different, and Megumi Fushiguro might have received really harsh treatment in an effort to save people from the curses that were attracted by the finger. In the absence of Sukuna's power within a vessel, the finger would have remained a dormant cursed object, potentially attracting stronger curses over time.
More importantly, without Yuji as Sukuna's vessel, the powerful alliances and enmities formed because of Sukuna's reincarnation would not have materialized. To say the least, having Yuji around as a vessel kept Sukuna's power divided so that jujutsu sorcerers would stand at least some chance of fighting disasters and other curses.

If Yuji had died from Sukuna's finger, then Sukuna might have finally reincarnated into a physical form or tried to take over Yuji's body fully. Had Sukuna failed to stabilize in Yuji's body, his fingers would have scattered again, waiting for another possible host.

However, completely destroying Sukuna's fingers is virtually impossible due to their indestructible cursed energy.
