To QB slide, you need to press X on Xbox or Square on PlayStation when you're rushing with the ball as your Quarterback. This will cause your QB to slide on the ground with their feet leading the way; a move you have likely seen performed weekly in the NFL.

From my experience playing, I've found it's better to tap the button to initiate the QB slide a second or two before you want to, as there can be a slight delay in the move being executed. While it's only very small, it's enough time for an incoming defender to make contact with your QB and tackle them.

If your QB has high speed and agility stats, this seems to make a difference in terms of how quickly they'll QB slide after you've tapped the button to do so. As such, it's worth checking this stat before a game starts and keeping it in mind.

Another alternative is to dive in College Football 26 by pressing and holding X/ Square. This will cause your player to dive head-first with the ball a good few yards in the direction that they're running. This can be done with any player who has the ball and not just your Quarterback.

Keep in mind that if you try and dive when a defender is right in front of you, it won't work. The defending player will most likely grab and tackle you to the floor and can even lose you yards.
