If you're looking to maximize the amount of damage you can deal with each singular attack, the Smithscript Greathammer should be infused with a Magic, Sacred, or Flame infusion. These have the highest total damage, and change the scaling of the greathammer, reducing the STR dependency and making it scale better with either INT or FAI. If you want to use sorceries alongside this weapon, the magic infusion will optimize your stat spread.
However, the Sacred and Flame infusions will optimize your stats so you can more easily use incantations. Since the DLC has a much better selection of incantations compared to sorceries, this might be the best overall option. Since many enemies in the DLC are resistant to Holy, you'll get the best damage when you have the Flame infusion. You can also use a Poison, Blood, or Cold infusion to give the greathammer the ability to cause the corresponding debuffs.
