The only way to obtain the Carian Knight's Shield in Elden Ring is to defeat Moongrum Carian Knight in one of the courtyards of Raya Lucaria Academy. More precisely, you have to go to the eastern castle part and find the desired enemy, not far from the Debate Parlor Site of Grace. Here's how to get there:

Taking the Debate Parlor as your starting point, go into the passage to the left of the blue tapestry on the wall.
Once outside, go straight along the cliff to the right of the old fountain.
Next, jump onto the stone struts on the right and cross to the bridge.
Climb up the bridge, dodging the rolling stones. A classic dodge near the stone fence as the stone approaches will be enough to avoid death.
Having climbed to the top, you can enter a small courtyard where you will encounter Moongrum Carian Knight.

This enemy is relatively slow, and its melee attacks are inferior to many you have met before, so there should not be any problems during the battle. And as soon as this enemy is dead, you can take the Carian Knight's Shield with a 100% chance of retrieval.

This shield does not have unique skills, but it offers excellent protection against physical, magical, and holy damage and scales primarily with Strength and Intelligence. Additionally, this shield gives a good balance between Strength and weight, allowing it to find a place in many types of builds. Of course, to use it, you need to meet the minimum requirements of 10 Strength, 10 Intelligence, and 15 Dexterity, but this is unlikely to be a problem at this point in the story.
