For those unaware, Gandrel belongs to the Gur people and is a wandering monster hunter whose goal is to kill Astarion.

How To Save Gandrel In Baldur's Gate 3
If you are looking for the easiest method, you can save Gandrel in Baldur's Gate 3 by simply not finishing the conversation with him. After a couple of phrases, he will start talking about the vampire spawn that he wants to kill, and he will mention Astarion's name. The player's goal is to leave before Gandrel begins to go into detail regarding his intentions. Of course, Astarion will be a little upset that he could not kill his pursuer, but this will not become a big problem if you are trying to romance this vampire right now.
It is also worth noting that this NPC hunter will remain alive if you meet Gandrel before Astarion becomes part of your party. Simply put, if you don't have a vampire by your side, Gandrel has no reason to conflict with you, and you have no reason to protect a monster unknown to you.
Finally, as soon as Gandrel tells you about Astarion's atrocities, you have the option to give him the vampire. In this case, the fate of your vampire friend will be sealed, and he will leave your group forever. Gandrel remains alive as a result, but trading the life of a group member for the respect and gratitude of such an insignificant NPC is a wasteful decision, and we strongly do not recommend this option.

Should You Kill Gandrel In Baldur's Gate 3?
Among all the options, we recommend killing Gandrel in Baldur's Gate 3. His respect and gratitude do not have much impact on the plot, unlike Astarion and his storyline. In addition, besides respect from your vampire, by killing a hunter, you will receive a powerful two-handed crossbow, Gandrel's Inspiration, and some extremely useful consumables, such as a couple of good arrows and 2 Healing Potions.
As a last resort, if you want to beat the game with a minimum number of kills, you should walk away from the conversation without letting Gandrel find out about your party member. However, you shouldn't give Astarion to the hunter under any circumstances, as this has neither meaning nor benefit. Even if you don’t like Astarion that much, you should still keep him with you because of his personal storyline and reliable abilities.
